ingredients

1 large onion, chopped
1/2 cup celery
1/2 cup carrot
1/2 cup green pepper
1 clove garlic, finely chopped
7 cups vegetable broth
1 box of 28 oz diced tomatoes
1/2 tsp. Salt tea
1/2 tsp. dried basil tea
1/4 tsp. dried thyme tea
1/4 tsp. pepper tea
1 bay leaf
2 cups cooked brown rice
2 19 oz cans of rinsed and drained kidney beans
2 cups chopped fresh spinach coarsely
2 c. chopped fresh parsley table

preparation

step 1

In a large saucepan, sauté in a little olive oil over medium-high heat, onion, celery, carrot, green pepper and garlic. Cook until the vegetables are tender.
step 2

Add broth, tomatoes, salt, basil, thyme, pepper and bay leaf. Bring to boil. Lower the heat and simmer 10 minutes. Increase heat again and bring the soup to a boil.
step 3

Add cooked rice and beans and simmer 5 minutes.
step 4

Add at the end of cooking spinach and parsley
